more creative and less meat

This could pretty much sum up my cooking goals for the summer. It's not that we eat a ton of meat already, but I think we'd be healthier if we cut back even more. I've been searching for meat-free meals that my family will enjoy. This week we've tried spinach and black bean enchiladas from my friend Jen's blog. And baked gnocchi with spinach and fresh mozzarella from Claire's blog. The WHOLE family loved them both!

So what is your favorite meat-free meal?

Does fish count as meat to you? I have so many, many meat free meals - thinking of a favourite is tricky. A lot of them involve fish. Probably my easiest go-to, though, that doesn't have meat in it is our curry yellow split pea soup. It's yummy and crock-pot easy. We just did really fun "toad in a hole"s last night - cut-up red bell pepper circles with eggs cooked in the middle of them served on toast. (Grated parm cheese on them optional.)

Anything with an animal name wins points over here. :)

Glad you liked the burritos. Anything vegetarian Mexican is a crowd pleaser around here. I updated the labels on my blog for vegetarian recipes the roasted vegetable lasagna, potato burritos, and ciabbata sandwiches are family favorites around here.

I have a couple good ones if you want the recipes. I'm with Jen, anything Mexican around here is a good bet too=) Amber's friend Mara has a great Tortilla Casserole recipe that we've had a few times and I have a southwestern corn chowder recipe too that has reduced sodium chicken broth but no meat.

Hi Rachel! I have many meat-free meals. One of my favs is this garbonzo bean/lentil curry dish. Lentils (made with veggie broth or bullion) served with brown rice and steamed veggies is super easy and yummy in my opinion, but a little too boring in Shane's view LOL.

Loved all the photos. Congrats to Luke!

Hands-down, yam/sweet potato enchiladas! Second would be stuffed grilled marinated portobellos.
